Baked goods change as they cool. Our recipes almost always specify "transfer to a rack and let cool for number minutes."

me, an absolute gremlin: waits exactly ten minutes

only exception is if it's a cake that needs frosting or similar, in which case i do let it cool completely or else the frosting gets ruined....coincidentally, no relation at all, crazy happenstance and all, i haven't baked a cake that requires frosting in close to four years...

for me it's also that frosting is super sweet and I don't much like it :''D but it definitely has its perks not having to wait forever to eat it. :p

For me, part of the point of home baking has always been eating at least a little of what you bake when it's still warm. The way I see it, finding out I needed to eat gluten-free, which meant I'd need to make most of my baked goods myself, just means I get to eat more stuff when it's warm.

Except if I need to frost it. Then, yeah, I wait until it's cool so the frosting isn't ruined. But even then, I do a taste-test of the unfrosted baked good.

was the perfectly proper answer for the child when he was questioning the waiting.

I don't generally taste before it's ready for serving because I'm going for the 'correct' presentation.

It probably helps I've been cooking and baking for over 5 decades and
1) the burnt tongue doesn't affect just that bite but the entire day's tasting and
2) if it needs to wait for frosting/glaze/setting then the just baked portion isn't actually the taste I'm hoping for.

And all this means that yes, I do mostly 'wait that long'.

Tabs (who loves chocolate chip brownies fresh from the oven with still melted bits of chocolate!!)
