This is a cereal of small round o's that carefully never mentions Cheerios on the packaging. They're slightly smaller and slightly crunchier than I remember cheerios being, but they're a pretty good substitute. If you like putting any kind of milk over your cereal (which I don't), I bet these wouldn't get soggy too fast.

It says gluten-free right on the front, but then in small print on the side (I noticed after buying them) it says, "Made in a facility that also processes soy, dairy, wheat, eggs, sesame, and tree nuts." It also says "Top 9 allergen free" and "3rd party tested." So it's a judgment call. I don't think I would buy them again myself, especially since it's $7 or 8 for a 7 oz box.

There's a whole holier than thou "pure foods" blurb on the back of the box that I was willing to ignore, but it makes the facility thing even more annoying.

The plain unsweetened version has organic cassava flour, organic coconut oil, and sea salt. They have a slightly sour taste that must come from the cassava, but it's a fine plain snack.

The cocoa version has organic cassava flour, coconut flour, organic coconut sugar, organic cocoa powder, organic coconut oil, organic vanilla extract, and redmond real sea salt. These are a great chocolatey snack! I would really be tempted by these if it weren't for the facility thing.

I bought the cinnamon version a while ago and wasn't so impressed with that one, but I gave these other flavors a try because they were on sale.

I wasn't a kale fan until I tried these, which are an easy way to eat a lot of greens! They're a little fiddly the first time you make them, but once you figure out the quantities and timings for your oven or microwave, they're definitely low effort.

Ingredients:
big heap of kale (I had about 5 cups, initially, ripped up)
1 tbsp garlic olive oil (or regular olive oil)
sprinkle of salt
several grinds of black pepper
¼ tsp MSG or 1 tbsp nutritional yeast
a squeeze of lemon juice

I got a hankering for nutritional yeast, saw some that was labeled gluten-free at Trader Joe's, and went hunting for a recipe. This one for 30-Minute Cheesy Kale Chips at the Minimalist Baker looked good.

I did an even more minimalist version (below) that turned out fine, and I bet the original version is yummy if you can tolerate the full list of ingredients. I will admit to being impatient and tired and having some turnips I also wanted to bake, so I crowded the veggies on a baking sheet without patting them dry first, and my "chips" did not turn out crisp, for the most part. They still tasted good!

Got any other recipes you like with nutritional yeast as a condiment?

Ingredients

1 bunch kale leaves, approx 10 oz
2 Tbsp (1/8 cup) olive oil
4 Tbsp (1/4 cup) nutritional yeast (plus extra as a topping)
1/4 tsp salt
1/4 tsp white pepper

Oven at 300 degrees F.

Natalie Perry's The Big Book of Paleo Slow Cooking is my go-to crockpot cookbook. (That link will take you to her website and an Amazon link for the books). I generally annotate recipes after I make them--comments like "easy, everybody ate it," "sub green beans for zucchini," or "way too much prep." Flipping through this book, I see a lot of "good" comments, with a healthy dose of "good!!" I find getting the spice ratio correct to be one of the larger factors in a successful crockpot recipe, so the exclamation points say that at least for my tastes, Perry usually gets the spices right.

This is an easy dish with at most four ingredients. My family uses it as a side dish; I dump whatever the protein of the day is on top of it and use it as a starch. Paleo-compliant as written.

I consider this recipe quick because if you use pre-cut or shaved sprouts, the dish can be prepped in the time it takes the oven to preheat. It's a one-dish meal, and you can add a starch alongside or not. I believe I originally got it from a Central Market recipe handout. Paleo-compliant as written.

If mayonnaise is the type of item you care to make yourself, this is my favorite of the recipes I've tried. It's from Melissa Joulwan's Well Fed: Paleo Recipes for People Who Love to Eat. I recommend all her cookbooks, although I find this one and Well Fed Weeknights the most useful.

Bakerita: 100+ No-Fuss Gluten-Free, Dairy-Free, and Refined Sugar-Free Recipes for the Modern Baker, by Rachel Conners

All the recipes in this book are gluten free, dairy free (or, when using ghee, lactose free), soy free, and refined sugar free. Many are vegan, and most are paleo. Each recipe indicates up top what it's free of and what diet(s) it meets. Headnotes are chatty, but describe the item's taste and texture in addition to its personal significance.

This covers breakfast and dessert, so no savory bakes like breads or crackers, just an everything bagel scone that looks like a lot of fun. This is mostly sweet stuff: muffins, scones, granolas, quick breads, baked donuts, cakes, cupcakes, pies, tarts, no-bake no-cheese cheesecakes, crumbles, cookies, brownies and bars, and a final chapter with candies, chocolates, sweet sauces, and nut butters. There's a lovely photograph for almost every recipe. Measurements are in US volume and metric (grams), and there's storage advice for nearly everything.

Main ingredients are almond flour, coconut flour, tapioca starch, and arrowroot starch, but there are a few recipes with oats. Coconut sugar, honey, and maple syrup are used as sweeteners, nothing you'd have to go out of your way to find. Other ingredients include: coconut oil, coconut butter, nut butters, ghee, olive oil, coconut milk and cream, dairy-free milk, cacao (or cocoa) powder, chocolate, cocoa butter, eggs, and flax eggs. There's coconut or almond in nearly everything, but no gums, and most recipes use flax eggs instead of eggs.

If you're not interested in Conners's personal journey skip the "My Story" part of the introduction where she talks about "healthy" eating and her and her family's health issues, but the second part where she discusses the ingredients she uses is more neutral in tone.

In the back, a thorough index includes entries for major ingredients, always a nice touch.

You can check out Conners's food blog at Bakerita, which includes savory dishes, though be aware the oldest recipes aren't gluten free.

This is a tasty wrap and I use it to roll up anything savoury, or even for desserts. It's a nifty recipe if you're cooking for one, fast and easy to make in a microwave and the simple quantities are easy to remember. Microwaving it like this means it's easier to get the shape and thickness right, and no risk of it sticking to a pan. But you can also cook it in a large frying pan on medium to low heat, again using a circle of baking paper as below to prevent sticking. If so, just cook it through thoroughly, don't try to turn it.

I made a quick graphic to remind myself what the basic rules for the paleo diet are. I don't follow it myself as I limit carbs and don't agree with all its ideas (like the no dairy rule), but some paleo principles like fresh foods, organic/free-range, healthy fats and minimising sugar seem sound.

Our prompt for this month is paleo friendly!

A paleo diet is based on foods that could have been obtained by hunting and gathering back in the old days and typically includes lean meats, fish, fruits, vegetables, nuts, and seeds, but there's some variation in how people observe it. If you share a food or recipe that you consider paleo, let us know so we can tag it properly.

To fill this prompt, you can:

  1. Slide into the comments of this post and share a link to a recipe or product and why you like it.
  2. Write up a favorite recipe and post it to the comm.
  3. Post a review of a related product or cookbook to the comm.
  4. Try someone's recipe and reply to their post (or comment) with any changes you made and how it turned out.
This prompt lasts all month, but it's only for inspiration and not a requirement. You can post anything you like during this time as long as it meets the comm guidelines.

Hi all! I baked for the first time in a while, today, and these crackers came out to be very tasty. Try 'em!

I will note: the dough was a little dry at first. I had to add a little bit of hot water and a little bit of olive oil beyond what the recipe says. And I hadn't used a pastry mat or rolling pin in a while, so they didn't exactly come out all the same thickness. But they're yummy!

24 oz frozen mango chunks, thawed
1/2 cup granulated sugar
1/2 cup water
1 tablespoon lime or lemon juice
1 tablespoon vodka or dark rum (optional)

I try to eat keto-friendly foods although I don't stick to it closely these days as oatmeal's been an essential comfort during lockdown. But I prefer lower-carb options so this recipe looked interesting. It's said to be Paleo-friendly too (apparently vanilla's allowed!) although I don't bother with Paleo stuff myself. Anyway, I tried this and it worked very well and was excellent with yoghurt. Very tasty as a snack all by itself, too. I'll put non-keto options where those apply. Below is the version I made with what I had available, and I think this is a pretty forgiving recipe if you want to vary the ingredients.

I didn't press the granola down in the pan as the original recipe said as I wanted it to be easy to crumble, and that worked well. The food processor made it easy, but if you use chopped or slivered nuts and don't mind a chunkier granola and some elbow grease with a big bowl and a wooden spoon, you can manage without that.

These shortbread cookies are dense and buttery—without butter!—and have that fine, sandy texture you want from shortbread. They're super quick to make and you can do them as simple shortbread cookies or give them a different spin with a jam or chocolate center. Adapted from King Arthur Flour's Gluten-Free Almond Flour Shortbread Cookies.

Ingredients:

1 cup almond flour (97 grams)
1/4 cup powdered sugar (25 grams)
1/4 scant teaspoon salt
1/4 cup neutral tasting oil
1/2 teaspoon vanilla extract

Optional:

jam or preserves
chocolate baking discs
coarse sugar

This date-sweetened chocolate frosting doesn't taste like your standard frosting with all the fat and refined sugar, but if you can't have that—or don't want it—this is a fair replacement. It's thick and smooth, spreads easily, and has the texture and feel you'd expect from frosting. It's great on brownies.

Ingredients:

100 grams pitted dates (~1/2 cup)
1/4 tsp vanilla extract
60 mL warm water (1/4 cup)
85 grams unsalted natural nut butter (1/3 cup)
25 grams cacao powder or unsweetened cocoa powder (1/4 cup)
1 pinch fine salt (optional)
15 mL oil (1 tablespoon, or sub water or nut butter)

These vegan ginger cookies have a crisp outer shell, a soft chewy middle, and a good balance of sweet and spicy. They come together in one bowl, so they're super easy to make, and don't require much clean up. They're very similar to the spiced molasses cookies [personal profile] rydra_wong shared, only not as spicy and a little bit sweeter.

Ingredients:

1 3/4 cups almond flour
1/4 tsp salt
1/4 tsp baking soda
1/2 tsp cinnamon
1/4 tsp ground cloves
1/4 tsp ground ginger
1/4 cup maple syrup

These crisp but tender cassava flour crackers have a dry, powdery Cheez-It-esque nature that almost fools you into thinking there's cheese in there—an illusion helped along by their orangey color—but they're dairy free and vegan. They're also surprisingly easy to make and stay crisp for weeks.

Ingredients:

1 1/4 cups (180g) cassava flour
1/4 cup (24g) golden flaxseed meal (optional)
1/2 teaspoon fine salt
1/2 teaspoon garlic powder
1/2 tsp baking powder
1 tablespoon dried oregano
1/2 cup (108g) water
6 tablespoons (78g) olive oil
1 tablespoon (20g) tomato paste (optional)

That's It fruit bars are just fruit with nothing added. They're vegan, paleo, kosher, and certified GF. From their FAQ:
All of That's It snacks are made in our own facility, which is free from peanuts, tree nuts (except for coconut), dairy products, eggs, soy, wheat, crustaceans, and fish.
Instead of a tough strip of dried fruit leather, this is a soft fruit bar, a mix of blended and minced fruit. It's tender and flexible with a soft and chewy texture that isn't so super sticky it welds your mouth shut. In fact these barely get stuck in my teeth at all. I like them for a sweet snack or a dessert. Where I shop they're sold individually, usually near the protein bars; though Target sells them in boxes.

flavor rankings )

Trader Joe's makes a version of these bars that's also vegan and labeled Gluten Free, but the quality can be variable, with one bar being better (more tender and flavorful) than the next. They come in four flavors, and while I enjoy the Apple + Strawberry, the Apple + Mango is consistently inferior to the That's It bar. TJ's also has Apple + Coconut, and Apple + Banana.

I had some leftover dates and a dream, so I whipped these up. Tastes like a Larabar Lemon Bar, but better. Tastes like lemon candy. Low effort and based on these no bake lemon bliss balls.

Ingredients:

120 grams dates, pitted—I used deglet noor ~15 dates
1/2 cup raw nuts—something mild: almonds, cashews, Brazil nuts
1 Tablespoon lemon zest
1-2 Tablespoons lemon juice
pinch of kosher salt
