Apropos of nothing, but I invented this recently and it's quick and very tasty. GF, Low Carb, Vegetarian. Serves 1.
 
Ingredients:
2 low carb GF wraps (or any GF wraps if not fussed about low carb)
1 cup sliced button or Swiss mushrooms (about 6 button mushrooms)
1/2 cup frozen peas
1 small-medium onion, chopped
1 tsp crushed garlic
salt to taste
Several grinds of black pepper
1/2 tsp paprika
1 squirt sriracha chilli sauce
1 handful tasty grated cheese
 
Directions:
Slice the mushrooms and onions. Heat a small amount of butter or neutral oil in a non-stick pan and add veggies, plus the garlic, pepper, salt, sriracha sauce, paprika. Stir. Put the peas in a container, barely cover with hot water and salt and leave for a minute, then tip the peas plus water into the main pan and simmer on lowish heat for 10 min or until all the water has gone and the vegetables are cooking in the oil. Make sure the mushrooms are well cooked down so that their water is mostly evaporated off. Add a good handful of grated tasty cheese (like parmesan or a sharp cheddar) and stir until it starts to melt. Slightly warm the wraps in the microwave, put on a plate and add half the veggie cheese mix to each. Turn off heat under pan! Fold/roll and eat. Repeat with second wrap. The pan's a minor hassle to clean, but soaking helps.
